Onions are a cosmopolitan food which is prepared in numerous ways and is a tasty morsel in many regional receipes.  The onions shown above are sometimes called “green onions” (although “green onions” often refers to plants harvested earlier). 

There are many varieties of onion and specific varieties are often used for specific purposes.  In general, however, they may be eaten raw (in salads, as a garnish, or as a side), sauteed, or added to soups.  The use of onions is limited only by the imagination of the chef.  The taste of raw onions vary significantly with the variety, from sharply pungent to significantly less so (sweet onions). Both the leaves and the bulb of the plant may be eaten.

The plant from which it was domesticated is unknown but is thought to have been from Central Asia.
